Wakayama prefecture definitely never made it on my short (nor long) list of cycling destinations in Japan due to all those mountains... However I found that Wakayama seems to be very enthusiastic about building a cycling network and has also some (few) easier rides:

... and downloadable strava maps, which is really unique.
There are also some more routes connecting with Nara:

Giant has probably somewhere a rental location, and provides some suggested tours: https://bicyclerental.jp/en/course/
This blog is about travelling through Japan on a bicycle. Initially on a foldable bicycle (Brompton) and more recently mostly by road bike (Spezialized)... but also by train, ferry, plane, bus or any other transport, if sea, weather, mountains or the like come between me and my desire to ride.
I have tried to summarise information that could be potentially helpful also for other bicycle travellers through Japan, such as list of bicycle roads, helpful web pages etc.
